Chef Rick SimonsEveryone in the kitchen has a nickname and Chef Rick's became "Slick Rick". He embraced the name and now uses it as his company logo. Over seven years ago Rick was working as a chef on the Mississippi Gulf Coast, when Hurricane Katrine "moved" him north to Natchez, Mississippi. After the move he looked at his life and began questioning what he really wanted to do. He knew that he wanted to continue to provide fine cuisine products in the healthiest manner possible. Due to being somewhat of a rebel in the food world, he followed his desire of using totally "organic" ingredients in the meals that he was now preparing, including the spices that he had begun to develop. Chef Rick wanted to create a spice that every chef or cook could use and it would only enhance the taste of the food rather than mask it. Many of the all purposes spices on the market today all taste the same, or are too salty on various dishes. The Red Spice, the first to be created by Chef Rick, changes with each dish to marry with the flavor of the food. From this humble beginning he has created twelve organic spices that are specific to the food being prepared, but are also interchangeable with different dishes as each individuals' taste dictates. This concept has been well-received and keeps him working on new concepts for the health conscious diner. Since the beginning in 2002 with the basic idea of an all-purpose spice, Slick Rick is now looking forward to the future. A restaurant will be opened in the near future called, what else, Rick's, Cafe Natchez and it will feature his recipes, spices, gifts, and great fun.
